Syllabus Description:

Description: This course prompts students to think critically and reflectively about the field of Nutrition Science by both “writing to learn” and “learning to write.” Course themes include race, taste, and eating, capitalism and the commodification of food, food policy, and food justice movements. Students take part in a book club, small group peer-review, in-class workshops, engagement with multimodal content, a field trip, and guest speakers. Planned projects include a recipe zine, an analysis of food media, and a research paper on Indigenous food sovereignty. With this ‘W’ credit, students can expect to emerge better prepared for rhetorical situations in both inter and transdisciplinary contexts.
